Dalgona (Korean sugar honeycomb candy)

Method

Molten sugar is dangerous: it is far hotter than boiling water, sticks to skin, and keeps cooking for a moment even off the heat. Work carefully, keep children and pets clear of the stove, and have every tool in place before you start, because once the ladle goes over the flame there is no time to go looking for anything.

1. Set up the whole station first: a sheet of parchment or a silicone mat on the counter, a flat-bottomed glass or metal press lightly greased with a drop of neutral oil, a chopstick or small heatproof spoon for stirring, and a small cookie cutter if you want to stamp shapes. Weigh the sugar into 5 small piles of about 20 g each, and portion the baking soda into 5 small level pinches. There is no time to measure once the sugar is on the heat.
2. Work one portion at a time. Put one pile of sugar into a small metal ladle or a small pan and hold it over low-medium heat. It melts from the edges inward; stir gently with the chopstick as it goes, and lift the ladle briefly off the heat if it starts to smoke.
3. Once the sugar is fully melted, smooth, and light amber, about 170°C if you check it, pull the ladle completely off the heat.
4. Immediately stir in one portion of baking soda, fast and hard, for about 20 strokes. The mixture foams up pale and puffs to two or three times its volume within seconds. This is the entire point, and it happens fast: keep stirring and do not let it sit over the heat, or it scorches and turns bitter.
5. Pour the foam onto the parchment while it is still moving, and let it sit for 15 to 20 seconds to firm slightly. Press it flat with the greased glass to about 5 mm thick, or press a cookie cutter partway into the center while it is still warm enough to take the shape.
6. Repeat with the remaining 4 portions, wiping the ladle clean between batches so leftover caramel does not scorch and darken the next one.
7. Let all the pieces cool and harden completely, about 5 minutes, before snapping them off the parchment.

Notes

• Stamping a shape (circle, triangle, star, umbrella) into the center while the candy is still warm is the classic street-vendor move, and the basis of the Squid Game candy-picking game, where the challenge is to free the shape without cracking the rest of the disc.
• Baking soda is the entire rise here. Too little and the candy sets as a flat, hard toffee with no honeycomb bubbles; too much and it tastes bitter and soapy. Measure it level, not heaped, and resist the urge to add extra “to be safe.”
• Eat dalgona the same day it is made. Sugar pulls moisture from the air, so the candy turns sticky and loses its snap within a day, faster in humid weather. If you must hold it, seal it airtight with a desiccant packet or between layers of parchment, but expect it to soften.
• A candy thermometer helps if you have never made caramel before, but the quantity here is genuinely too small to trust the probe completely. The color of the sugar, pale gold sliding into light amber, is the more reliable signal.
