- 400 g strawberries, frozen solid, hulled rounded
- 120 ml white rum rounded
- 40 ml lime juice rounded
- 20 g sugar (optional) rounded

Method
- Combine the frozen strawberries, rum, lime juice and sugar if using in a blender.
- Blend in short bursts, scraping down the sides between each, until uniformly smooth and slushy, about 1 to 2 minutes total.
- Pour into glasses and serve immediately.
Notes
- Use fully frozen strawberries, not fresh ones with added ice. Blending frozen fruit directly gives an intensely flavoured, undiluted slush; fresh fruit plus ice cubes waters the drink down and dilutes the strawberry flavour.
- Blend in short bursts rather than running the blender continuously. This lets you scrape down unblended chunks between bursts, breaking up the ice evenly instead of leaving pockets of solid fruit at the bottom.
- Taste before adding sugar. Frozen strawberries vary a lot in sweetness, so the sugar is optional and should be adjusted to the fruit you have.
- Serve immediately. Like any frozen drink, it starts to separate and lose its texture within 10 to 15 minutes.
Ingredient substitutions
- Strawberries can be any frozen berry.
- White rum can be swapped for a non-alcoholic version by leaving it out and adding a splash more lime juice and a little water instead.
- A few fresh mint leaves blended in add a fresh note.
