Ingredients

Guava chiffon batter

  • 240 g cake or pastry flour, sifted twice for lightness; plain flour works but gives a slightly denser crumb
  • 12 g baking powder
  • 3 g fine salt
  • 170 g granulated sugar, for the yolk batter
  • 90 g granulated sugar, added gradually while whipping the egg whites
  • 110 g neutral vegetable oil, such as sunflower or canola oil
  • 180 ml guava nectar or guava purée, at room temperature; see substitutions for options
  • 7 egg yolks, large eggs, separated while cold
  • 5 g vanilla extract
  • to taste pink or red food coloring, optional; a drop or two to taste, the guava alone gives a natural pale coral color (optional)
  • 7 egg whites, from the same eggs, at room temperature for maximum volume
  • 3 g cream of tartar, stabilizes the meringue; substitute 1/2 teaspoon lemon juice if unavailable

Guava glaze, optional

  • 150 g powdered sugar
  • 30 ml guava nectar or guava purée, add gradually until the glaze is pourable but still coats the back of a spoon
