Hohenloher Blootz

Method

1. For the fresh-yeast route, crumble the 15 g fresh yeast into 100 g of the water, then stir in the sugar and 100 g of the flour. For the instant-yeast route, whisk the 5 g instant yeast into 100 g of the flour, then stir in the sugar and 100 g of the water. In either case, cover this starter and rest for 30 minutes, until visibly bubbly.
2. Add the remaining 400 g flour, remaining 200 g water, and the salt to the starter. Knead for 8 to 10 minutes, until smooth and elastic. This Hohenlohe yeast dough weighs exactly 830 g with fresh yeast, or 820 g with instant yeast. Cover and rise for 45 minutes, until expanded by about half.
3. Roll the dough to a 30 x 40 cm rectangle and transfer it to a sturdy dark metal sheet with a 2.5 cm rim. Ease the dough into the corners without making a raised pizza border. Cover and rest for 30 minutes.
4. Heat the home oven to 230°C conventional heat for at least 30 minutes with a rack in the lower third. Use the topping selector below for exact quantities and before-bake and after-bake steps. The named Blootz option is a lighter house pizza adaptation with Schmand or yogurt, onion, bacon, and mozzarella; it is not the egg-bound regional finish.
5. Spread the selected topping evenly without crushing the rested yeast base. Bake for 20 to 25 minutes, rotating once, until the topping is cooked and a lifted corner reveals a crisp deep-golden underside. If the top colours before the base, move the sheet lower and cover loosely with foil.
6. Follow the selector for finishing ingredients. Rest for 5 minutes, cut into 12 pieces, and serve hot while the base remains crisp.

Notes

• Baker’s percentages: dark wheat flour 100%, water 60%, fresh yeast 3% or instant yeast 1%, salt 2%, and sugar 1%. The fresh-yeast dough weighs exactly 830 g for one 30 x 40 cm sheet.
• Unlike Flammkuchen, Hohenloher Blootz uses a risen yeast dough and a substantial Schmand-and-egg topping finished with regional grated cheese. Flammkuchen is rolled ultra-thin from a quick unleavened dough and has no egg custard or required cheese layer.
• Blootz is a Hohenlohe regional sheet bread related to the old practice of using bread dough and the retained heat of a communal oven. Savoury and sweet versions exist. The shared selector offers a clearly labelled house pizza adaptation rather than claiming to reproduce every regional version.
• The traditional Schmand-and-egg finish with regional grated cheese remains documented context, but it is not supplied as an exact selector formula in this release. This page owns the yeast base and sheet handling.
• A home oven cannot reproduce the stored heat of the traditional wood-fired bread oven. A dark metal sheet on the lower rack improves the bottom; do not substitute glass, which heats too slowly for the same crisp base.
• Refrigerate leftovers made with a perishable selector topping for up to 2 days and reheat at 200°C.
