Method

  1. Mash the anchovy fillets and garlic together into a smooth paste, using the flat of a knife or a mortar and pestle.
  2. Whisk the anchovy-garlic paste, egg yolk, lemon juice and mustard together. Drizzle in the olive oil in a thin, steady stream while whisking constantly, until emulsified. Whisk in the grated cheese.
  3. Toss the bread cubes with the olive oil for the croutons. Fry in a hot pan for about 8 minutes, tossing often, until deeply golden and crisp.
  4. Toss the romaine leaves with the dressing.
  5. Add the croutons at the very last moment and toss briefly. Top with shaved cheese and serve immediately.
