  • 400 g light brown sugar
  • 225 g salted butter, softened
  • 100 g whole egg, 2 large eggs
  • 80 ml milk
  • 10 ml vanilla extract
  • 5 g fine salt
  • 5 g baking soda
  • 300 g plain flour
  • 240 g old-fashioned rolled oats
  • 795 g dulce de leche, 2 cans of about 397 g

Method

  1. Heat the oven to 175°C and grease a 23 x 33 cm pan.
  2. Beat brown sugar and butter until fluffy. Beat in the eggs one at a time, followed by milk and vanilla.
  3. Whisk salt, baking soda, flour and oats, then add gradually. Press two thirds of the dough evenly into the pan.
  4. Warm the dulce de leche in short microwave bursts, stirring every 15 seconds, just until spreadable. Spread over the base and dot with the remaining dough, leaving some filling visible.
  5. Bake for about 25 minutes, shielding loosely if the top browns too quickly. Cool completely before cutting.

Notes

  • Warm the filling only enough to spread; overheated dulce de leche can burn.
  • The bars set as they cool and taste less intensely sweet when fully cold.
