  • 500 g strong white bread flour
  • 7 g instant yeast
  • 10 g fine salt
  • 320 ml lukewarm water
  • 45 ml extra-virgin olive oil
  • 180 g pitted Kalamata olives, well drained and chopped
  • 8 g dried Greek oregano
  • 10 g sesame seeds, optional

Method

  1. Mix flour, yeast, salt, water, and 30 ml oil. Knead until elastic, about 9 minutes.
  2. Pat the olives very dry. Knead olives and oregano into the dough only until evenly distributed.
  3. Cover and rise for 60 to 75 minutes, until doubled.
  4. Shape into a round loaf, set on a lined tray, brush with remaining oil, and proof for 30 minutes. Heat the oven to 200°C.
  5. Slash the top, add sesame if using, and bake for 35 to 40 minutes until dark golden and hollow-sounding underneath. Cool fully before slicing.

Notes

  • Wet olives create gummy pockets, so drain and blot them thoroughly.
  • Add the olives after gluten development; their sharp edges otherwise tear the dough during kneading.
