Dip

  • 400 g full-fat plain yoghurt
  • 80 g feta cheese, crumbled
  • 60 g sun-dried tomatoes in oil, drained, finely chopped
  • 1 garlic clove, grated
  • 20 ml olive oil
  • 5 g dried mint
  • to taste fine salt

Method

  1. Line a sieve with a clean cloth or a few layers of paper towel and set it over a bowl. Pour in the yoghurt and let it drain for 30 minutes at room temperature, until visibly thickened.
  2. Discard the drained liquid. Transfer the strained yoghurt to a bowl.
  3. Fold in the crumbled feta, chopped sun-dried tomatoes, garlic, olive oil and dried mint.
  4. Season with salt. Chill for at least 15 minutes before serving to let the flavours settle.

Notes

  • Don’t skip the straining step. Unstrained yoghurt is too loose to hold together as a dip; even a short 30-minute drain removes enough whey to give it real body.
  • Chop the sun-dried tomatoes fine rather than blending them in. Left as small pieces they keep a distinct, slightly chewy bite; blended smooth, they just tint the dip pink without adding texture.
  • Dried mint, not fresh, is traditional here and has a different, more concentrated flavour that suits the dip better than fresh would.
  • It keeps for 4 days in the fridge, and the flavour deepens overnight.

Ingredient substitutions

  • Feta can be a mild curd cheese if a less salty result is wanted.
  • Sun-dried tomatoes can be swapped for roasted red peppers, finely chopped.
  • A pinch of chili flakes adds heat if you like.
