  • 150 g fine almond flour
  • 42 g coconut oil for base, melted
  • 30 ml maple syrup for base
  • 5 ml vanilla extract for base
  • 1 g fine salt for base
  • 170 g smooth peanut butter, runny and well stirred
  • 80 ml maple syrup for filling
  • 55 g coconut oil for filling
  • 5 ml vanilla extract for filling
  • 1 g fine salt for filling
  • 130 g dark chocolate chips
  • 14 g coconut oil for chocolate

Method

  1. Line a 20 cm square tin and heat the oven to 175°C.
  2. Mix almond flour, base coconut oil, base maple syrup, vanilla and salt. Press firmly into the tin and bake for 10 to 12 minutes, until lightly golden. Cool completely.
  3. Warm peanut butter, filling maple syrup, filling coconut oil, vanilla and salt for about 2 minutes, stirring until glossy.
  4. Spread over the base and chill for 30 to 60 minutes until firm.
  5. Melt the chocolate with 14 g coconut oil, spread on top and chill for another 20 minutes.
  6. Cut into 16 bars with a warm dry knife.
