- 280 g pitted Medjool dates rounded
- 32 g smooth peanut butter rounded
- 5 ml vanilla extract rounded
- 1 g fine salt rounded
- 68 g oat flour rounded
- 70 g unsalted roasted peanuts rounded
- 225 g dark vegan chocolate rounded

Method
- Soak the dates in hot water for 5 to 10 minutes, then drain, reserving a little water.
- Process the dates, peanut butter, vanilla and salt to a thick smooth caramel. Add reserved water 15 ml at a time only if needed.
- Remove the caramel. Process 75 g caramel with the oat flour until a pinchable nougat dough forms.
- Press the nougat firmly into a parchment-lined loaf tin. Spread the remaining caramel over it and press in the peanuts.
- Freeze for 60 to 90 minutes. Lift out and cut into 8 bars. Return them to the freezer.
- Melt the chocolate gently. Dip each frozen bar completely, set on parchment and chill for 5 to 10 minutes.
Notes
- This is a dessert bar inspired by Snickers, not a nutrition claim.
- Use oats labelled gluten-free when required and verify the chocolate is vegan.
- Store refrigerated for up to 10 days or frozen for up to 1 month. Thaw for about 5 minutes before eating.
- Contains peanuts. The formula has seven ingredient lines because vanilla and salt are counted explicitly.
