  • 32 g smooth peanut butter
  • 5 ml vanilla extract
  • 1 g fine salt
  • 68 g oat flour
  • 70 g unsalted roasted peanuts
  • 225 g dark vegan chocolate

Method

  1. Soak the dates in hot water for 5 to 10 minutes, then drain, reserving a little water.
  2. Process the dates, peanut butter, vanilla and salt to a thick smooth caramel. Add reserved water 15 ml at a time only if needed.
  3. Remove the caramel. Process 75 g caramel with the oat flour until a pinchable nougat dough forms.
  4. Press the nougat firmly into a parchment-lined loaf tin. Spread the remaining caramel over it and press in the peanuts.
  5. Freeze for 60 to 90 minutes. Lift out and cut into 8 bars. Return them to the freezer.
  6. Melt the chocolate gently. Dip each frozen bar completely, set on parchment and chill for 5 to 10 minutes.
