Smoky lime sweet-potato chips
Thin sweet-potato rounds become lightly crisp at the edges in the oven or air fryer, finished with smoke, lime, and restrained sweetness.

- 500 g orange-fleshed sweet potatoes, narrow and similar in diameter rounded
- 12 ml neutral high-heat oil rounded
- 4 g smoked paprika rounded
- 2 g dried lime powder rounded
- 2.5 g fine salt rounded
- 1 g sugar rounded
- 0.5 g cayenne pepper (optional) rounded

Method
- Scrub and dry the sweet potatoes. Use a guarded mandoline to cut consistent 1.5 mm rounds. Soak in cold water for 10 minutes, drain, and press completely dry between clean towels.
- Mix the paprika, lime powder, salt, sugar, and optional cayenne. Keep the dry seasoning aside until cooking is complete so the lime powder stays bright and the sugar does not scorch.
- Oven method. Heat the oven to 165°C. Toss the slices with all 12 ml oil. Arrange no more than 250 g per lined 33 by 46 cm pan without overlap. Bake for 12 minutes, turn every slice, swap the pans, and cook for another 10 to 18 minutes. Remove small dry pieces first.
- Air-fryer method. Heat to 160°C. Toss each 120 g batch with its proportional share of oil. Air-fry for 12 to 18 minutes, turning and separating every 4 minutes. Lower the heat to 150°C if edges darken early.
- Toss the hot chips with the measured seasoning. Cool uncovered in one layer for 10 minutes. The edges crisp further, but the centres may retain a slight chew.
Notes
- Sweet-potato chips do not become identical to high-starch potato chips. Their natural sugars brown sooner and their centres may remain slightly flexible.
- Store completely cool chips airtight at room temperature and eat within 2 days. Refresh for 4 minutes at 140°C if they soften. Do not refrigerate or freeze.
- The fully dried lime powder keeps the seasoning storage-stable. Fresh juice or zest is for immediate serving only and softens the chips.
- These chips travel without an ice pack. Use a rigid container and never seal while warm.
